The new Healthy (Easy) list, recipe 1: Strawberry Chocolate Almond Overnight Oat

Yeah, I know, January. Who wants to see another healthy food post? I get it. But this one is good because it’s EASY and because NO ONE needs anything else to be hard right now.

So here’s a super simple way to get 31 grams of protein covered in your morning breakfast that’s also vegan and dairy-free to boot. This recipe was expertly crafted by my friend and registered dietitian extraordinaire, Dina Griffin, who’s helped me on a few ultramarathon race nutrition plans in the last few years (and I succeeded due to her help!)
